Job Description

Position Summary

Seeking for a skilled and detail-oriented butcher to join our Kitchen team. Will be responsible for the preparation, cutting, trimming, and portioning of meat products according to hotel standards. The role requires knowledge of meat handling, hygiene standards, and quality control to ensure consistent and safe food production.

Responsibilities:

• Receive, inspect, and store meat deliveries according to hygiene standards.
• Cut, trim, bone, grind, and portion meats according to production requirements.
• Prepare meat products for buffet, à la carte, and banquet operations.
• Ensure proper labeling, dating, and storage using FIFO procedures.
• Maintain cleanliness and sanitation of the butchery area and equipment.
• Monitor product quality and report any discrepancies to the Chef.
• Minimize wastage through proper portion control and trimming techniques.
• Maintain knives and butchery equipment in safe working condition.
• Follow HACCP and food safety regulations at all times.

Job Requirements

Knowledge, Skills and Abilities:

• Proven experience as a butcher in a hotel or restaurant environment.
• Strong knowledge of different meat cuts and preparation techniques.
• Understanding of food safety and hygiene standards.
• Physically fit and able to handle heavy products.
• Ability to work under pressure and meet production deadlines.
• Attention to detail.
• Flexible to work shifts, weekends, and public holidays.
