Mahe Laundry Services is a start-up laundry venture located in Roche Caiman, on the mainland of Mahe, Seychelles. The commercial laundry will service mainly business customers in the hospitality, industrial and heathcare sectors and has a total capacity of ± 13,000 tons/day.

We are currently recruiting for the following position:

Job Description

Position Summary

The Kitchen Assistant supports the daily operation of the kitchen by assisting with the preparation, cooking, serving, and cleaning of all meals for approximately 35 staff members each day, including breakfast, lunch, dinner, and refreshments as required. The role requires working as part of a team to produce nutritious, high-quality meals while maintaining the highest standards of food safety, hygiene, and cleanliness.

The successful candidate must be capable of working in a fast-paced environment and be willing to work long hours, weekends, public holidays, and irregular or split shifts to meet operational requirements.

Key Responsibilities

  • Assist with the preparation and cooking of daily meals.
  • Support the Head Cook/Chef in preparing a variety of meals that cater to different nationalities, cultural preferences, and dietary requirements, including Halal meals and other special dietary needs as directed.
  • Prepare ingredients by washing, peeling, chopping, slicing, and measuring food items.
  • Assist in cooking meats, poultry, seafood, vegetables, rice, pasta, soups, sauces, baked goods, and desserts according to established menus and recipes.
  • Ensure Halal food is prepared, handled, stored, and served in accordance with approved food handling practices, avoiding cross-contamination.
  • Assist with serving meals in a timely and professional manner.
  • Monitor food quality, freshness, and presentation.
  • Maintain appropriate stock levels and assist with receiving, checking, and storing food deliveries.
  • Rotate stock using First In, First Out (FIFO) principles.
  • Clean kitchen equipment, utensils, benches, storage areas, refrigerators, and cooking appliances after use.
  • Wash dishes, pots, pans, and kitchen equipment as required.
  • Dispose of waste safely and maintain cleanliness in all kitchen and dining areas.
  • Follow workplace health and safety procedures and always comply with food safety and hygiene regulations.
  • Report equipment faults, food shortages, or health and safety concerns to the supervisor.
  • Assist with stocktaking and inventory control when required.
  • Perform other kitchen and catering duties as assigned by management.

Job Requirements

Skills and Experience

  • Previous experience working in a commercial kitchen, institutional kitchen, camp kitchen, hotel, restaurant, or catering operation is preferred.
  • Experience preparing meals for large numbers of people is highly desirable.
  • Knowledge of food hygiene, sanitation, and safe food handling practices.
  • Understanding of multicultural cuisine and the preparation of meals for diverse workforces.
  • Experience or knowledge of preparing Halal meals is highly desirable.
  • Ability to work efficiently under pressure while maintaining quality standards.
  • Good communication and teamwork skills.
  • Reliable, punctual, and able to follow instructions.

Physical Requirements

  • Ability to stand for extended periods.
  • Ability to lift and carry heavy pots, food supplies, and kitchen equipment safely.
  • Ability to work in hot, humid, and physically demanding kitchen environments.
  • Good physical fitness and stamina.

Working Hours

This position requires flexibility to meet operational demands from Monday to Sunday, forty-eight hours per week. The employee is entitled to twenty-four hours off a week and one hour break per day of which thirty minutes is paid.

The successful candidate must be willing and able to:

  • Work long hours as required.
  • Work early mornings, late evenings, weekends, and public holidays.
  • Work odd, rotating, split, or extended shifts depending on operational requirements.
  • Work additional hours during periods of high demand or special events.
