Job Description
Job Summary
- Responsible to effectively manage the Cap Lazare restaurant
Responsibilities:
- Prepare quotations for events.
- Liaise closely with the chef pertaining to the preparation of the daily menus and others such as special offers and packages to potential markets such as residents, nearby hotels and groups (school children, ministries, etc).
- Develop and submit proposals to management for the improvement and betterment of the restaurant
- Prepare menu costing in collaboration with chef
- Maintains Sales Records and Tracks Receipts
- Prepare monthly financial and operational reports for the Accounts Department and Management: Food & Beverage stocks, covers made and sales, events post-mortem etc.
- Monitor and manage bookings and liaise with the Excursions Department regarding direct bookings and walk-in clients.
- Responsible for overall purchases and management of appropriate stocks
- Control operational costs and identify measures to reduce waste
- Undertake banking of sales proceeds or any revenue collected by the restaurant as per procedures in place
- Manage petty cash and bar float
- Administrative duties – timely submission of invoices to Finance Department for payment of suppliers/ LPO list
- Ensure that local regulations in relation to health and safety standards are adhered to.
- Implement cleaning schedules especially for the kitchen and service areas.
- Ensure beach area and premises are cleaned daily.
- Follow up on STB reports and ensure that recommendations are implemented.
- Ensure continuous maintenance of equipment and premises. Liaise closely with the Maintenance Manager for all maintenance requirements.
- Ensure that staff members respect and adhere to company policies and regulations (Uniforms, behaviour, grooming etc).
- Supervise and manage staff under responsibility in accordance with CTS’s policies and procedures
- Establish employee goals and conduct employee performance reviews
- Coordinate with the Human Resources and Administration Department for appropriate staffing levels
- Facilitate on the job training for staff
- Responsible to meet the Restaurant’ productivity and quality goals
- Find new ways to continuously improve the standards of service in the restaurant
- Any other related duties
Job Requirements
EDUCATION (KNOWLEDGE):
- Diploma or Degree in Tourism Management

- The ability to prioritise and juggle multiple responsibilities.
- Excellent communication skills.

- Able to communicate well in English and French. A third language is an advantage.

- Minimum two years working experience

WORKING HOURS
48 hours per week with a day off per week
