Bravo! Restaurant Seychelles is seeking applications for the position of Sous Sushi Chef.

The successful candidate will assist the Head Sushi Chef in all aspects of sushi kitchen operations and be responsible for maintaining the highest standards of food quality, presentation, hygiene, and staff training.

Job Description

Duties & Responsibilities

  • Create and maintain a diverse sushi menu featuring a variety of raw fish and premium ingredients including salmon, tuna, snapper and other seasonal products.
  • Prepare all types of sushi including Maki, Nigiri, Sashimi, Specialty Rolls and Fusion Rolls.
  • Prepare Japanese-inspired appetizers, soups, salads and accompanying dishes.
  • Perform sushi preparation and fish filleting to a high standard, including preparation in view of guests.
  • Assist with menu planning and development of new dishes.
  • Monitor stock levels and assist with ordering and inventory management.
  • Maintain the highest standards of food safety, hygiene and sanitation.
  • Ensure compliance with all company policies and Ministry of Health regulations.
  • Coordinate with front-of-house staff regarding guest requests, dietary requirements and food allergies.
  • Assist in training, mentoring and developing junior kitchen staff.
  • Lead the sushi bar operation in the absence of the Head Sushi Chef.

Job Requirements

Requirements

  • Minimum 10 years’ experience as a Sushi Chef.
  • Minimum 4 years’ experience in a Sous Sushi Chef position.
  • Extensive knowledge of traditional and modern Japanese cuisine.
  • Advanced skills in fish preparation, filleting and sushi-rolling techniques.
  • Experience in menu development and inventory control.
  • Ability to work efficiently in a fast-paced environment while maintaining exceptional quality standards.
  • Strong leadership, communication and team management skills.
  • Passion for training and developing other chefs.
  • Flexible and available to work evenings, weekends and public holidays as required.
