Location: Bravo Restaurant – Eden Island, Mahé, Seychelles

Bravo Restaurant is seeking to recruit an experienced and suitably qualified Chef to join our established kitchen team.

The successful candidate must have strong practical culinary experience together with a sound knowledge of food products, kitchen operations, food costing, portion control, stock management and food safety standards.

Job Description

The Chef will work closely with the Head Chef, Kitchen Manager and Food & Beverage Manager to ensure that Bravo Restaurant operates efficiently and maintains its established standards of food quality, service, hygiene and professionalism.

Responsibilities will include:

  • Preparing and producing food to Bravo Restaurant’s required recipes, presentation and quality standards.
  • Supervising and assisting with all phases of food preparation and meal production.
  • Ensuring food is prepared in the correct quantities and within required service times.
  • Reviewing daily menus and production requirements and preparing the appropriate food items.
  • Assisting with the supervision and operation of designated kitchen areas, including the Pastry Department, storerooms and provision areas.
  • Maintaining consistent portion control and weighing products where required to assist with effective food-cost management.
  • Completing and reviewing daily kitchen production sheets.
  • Checking incoming food products for quality, condition and freshness.
  • Ensuring correct food storage procedures are followed at all times.
  • Maintaining high standards of kitchen hygiene, sanitation and food safety in accordance with company procedures and local health authority requirements.
  • Checking prepared food for taste, consistency, quality and presentation.
  • Assisting with kitchen stock control, stock rotation and inventory management.
  • Minimising food wastage and assisting Management with maintaining appropriate food costs.
  • Ordering kitchen supplies when required in the absence of the Kitchen Manager and/or Food & Beverage Manager.
  • Assisting the Head Chef with the planning and coordination of functions and special events.
  • Assisting the Head Chef with the development of new dishes, daily specials and menu items.
  • Working cooperatively with the kitchen and restaurant management teams and following instructions from supervisors.
  • Assisting with the training, guidance and supervision of junior kitchen staff where required.
  • Ensuring all equipment and work areas are maintained in a clean, safe and organised condition.
  • Carrying out any other reasonable duties falling within the scope of the position of Chef as instructed by Management.

Candidate Requirements

Applicants should have:

  • Minimum 3 years’ proven professional experience as a Chef in a busy restaurant, hotel or similar commercial kitchen environment.
  • Relevant culinary training, qualification or certificate of competence.
  • Strong knowledge of food preparation, cooking techniques and kitchen operations.
  • Good knowledge of food hygiene, sanitation and health and safety requirements.
  • Experience with food costing, portion control, stock control and minimising kitchen wastage.
  • Experience completing kitchen production and preparation requirements.
  • Ability to maintain consistent food quality and presentation during busy service periods.
  • Ability to work effectively as part of a multicultural kitchen team.
  • Ability to follow recipes, instructions and established operating procedures.
  • Good organisational and time-management skills.
  • Ability to work under pressure in a high-volume restaurant environment.
  • Flexibility to work evenings, weekends and public holidays according to the restaurant roster.

Working Hours: Monday-Saturday – Shift Work
