Job Description

The Food & Beverage Supervisor is responsible for overseeing daily operations across assigned dining outlets at Fregate Island, ensuring high standards of service and guest satisfaction. The role involves supervising and supporting the F&B team, coordinating daily service, maintaining operational standards and delivering personalised dining experiences in a luxury resort environment.

Main Tasks

• Supervise daily Food & Beverage operations, ensuring smooth and efficient service across assigned outlets.
• Lead, support and motivate F&B hosts, ensuring consistent service quality and professional presentation.
• Conduct daily team briefings and communicate guest preferences, special requests and operational updates.
• Anticipate guest needs, handle feedback and resolve service issues professionally.
• Assist with training and coaching hosts on service standards, product knowledge and operational procedures.
• Support roster planning, task allocation and daily team coordination.
• Maintain high standards of cleanliness, hygiene and presentation in line with LQA and HACCP requirements.
• Ensure good knowledge of food menus, beverage selections, wines and daily specials.
• Monitor stock levels, inventory, wastage and operational supplies to support cost control.
• Ensure accurate billing, POS transactions and operational records.
• Coordinate with Culinary and other departments to ensure smooth service and support special dining experiences.

Job Requirement

Requirements

• Minimum 3–5 years of experience in Food & Beverage operations, including at least 1–2 years in a supervisory role.
• Previous experience in luxury hotels, resorts, fine dining restaurants or high-end hospitality environments.
• Strong knowledge of restaurant operations, luxury service standards and guest relations.
• Good food and beverage product knowledge, including wines, beverages and menu presentation.
• Experience supervising, training and motivating multicultural teams.
• Good understanding of HACCP, food safety, hygiene and operational procedures.
• Experience with POS systems, inventory control and operational reporting.
• Strong leadership, organisational and problem-solving skills.
• Excellent communication skills, attention to detail and a hands-on approach to service.
• Fluent English; additional languages such as French, German, Italian, Spanish, Russian or Arabic are an advantage.
• Flexibility and willingness to adapt to remote island living and working conditions.
