Bravo Restaurant is seeking a highly experienced and dynamic Food & Beverage Manager to join our senior management team.
Position: Food & Beverage Manager
Reporting to: General Manager and Company Directors
Job Description
Key Duties & Responsibilities
- Manage and oversee all day-to-day food and beverage operations, ensuring performance remains within budgeted guidelines and aligned with the highest service standards.
- Establish, implement, and monitor operational targets, KPIs, schedules, policies, and procedures.
- Achieve restaurant operational objectives by:
- Contributing to strategic planning and operational reviews
- Preparing and implementing toggle plans
- Maintaining production, productivity, quality, and customer service standards
- Resolving operational issues effectively
- Conduct monthly stock counts and manage ordering and purchasing of daily, weekly, and monthly stock for:
- Main kitchen
- Sushi kitchen
- Bar
- Housekeeping supplies
- Lead and manage staff by recruiting, onboarding, training, scheduling, coaching, counseling, and disciplining employees in line with company policy and Seychelles labour regulations.
- Communicate job expectations clearly and conduct performance planning, monitoring, appraisals, and reviews.
- Plan and review menus in consultation with chefs, including food cost analysis, profit estimation, and menu adjustments.
- Control food and beverage costs through portion control, preparation quantities, waste minimisation, and quality assurance.
- Ensure a safe, secure, and healthy working environment by enforcing sanitation standards, hygiene procedures, and compliance with all legal and regulatory requirements.
- Monitor food presentation standards and Front of House service standards consistently.
- Maintain effective stock control and food & beverage ordering aligned with menu requirements and stock levels.
Job Requirements
Qualifications & Experience
- Minimum 12 years’ experience in the same or a very similar role.
- Proven knowledge and hands-on experience with stock control systems and stock data capturing systems.
- Strong computer skills, including Microsoft Word, Excel, and Outlook.
- Demonstrated strong leadership abilities and the capacity to perform effectively in a fast-paced, demanding environment.
- Refined public relations and interpersonal skills.
- Highly self-motivated with a strong customer service focus.
- Extensive experience in food and beverage ordering, stock control, and menu management.
- Valid driving license with a minimum of 10 years’ driving experience.
- Own reliable transport.
- Willingness and availability to work shifts, weekends, and public holidays.
