A Head Steward is required to oversee and manage the stewarding department within our restaurant operation. The position plays a critical role in maintaining cleanliness, hygiene, and operational efficiency across all kitchen, dining, and service areas. The Head Steward will supervise the stewarding team and ensure compliance with company standards, Ministry of Health regulations, and safety procedures.

Job Description

Duties & Responsibilities

  • Supervision and Team Management
    • Supervise the stewarding department and allocate daily tasks and responsibilities.
    • Manage and oversee a team of approximately 6 stewards.
    • Assist the stewarding team in daily operational duties when required.
    • Ensure all job lists and cleaning schedules are completed efficiently and on time.
  • Kitchen Items, Equipment, and Appliances
    • Ensure cleanliness and hygiene of all kitchen items including dishware, glassware, silverware, pots, pans, crockery, and utensils.
    • Ensure correct storage of all kitchen items to prevent damage and breakages.
    • Operate dishwashing machines correctly, including proper detergent levels, time cycles, and regular cleaning.
    • Ensure correct use of approved detergents and sanitizers (PACE products).
    • Monitor kitchen equipment and appliances and report any faults or malfunctions to supervisors promptly.
    • Ensure all equipment is operated safely and in accordance with procedures.
  • Kitchen and Restaurant Areas
    • Maintain cleanliness of all kitchen, dining, and back-of-house areas.
    • Clean floors, walls, ceilings, windows, doors, glass panes, tables, and work surfaces.
    • Ensure floors are kept dry and walkways remain free of obstacles to prevent accidents.
    • Oversee cleanliness of guest bathrooms, staff bathrooms, and locker rooms in line with company standards.
    • Maintain cleanliness of back dock and receiving areas.
  • Waste Management
    • Manage waste disposal procedures including secure bagging of refuse and correct separation of recyclable materials.
    • Ensure trash cans are emptied, cleaned, rinsed, and stored safely.
    • Maintain cleanliness of dumpster and waste areas to prevnt pests and rodents.
  • Operational Support
    • Assist kitchen operations as required.
    • Assist with receiving deliveries and transporting supplies to storage areas.
    • Sweep and mop kitchen and service areas regularly.
    • Remove trash from kitchen areas and store in designated locations.
  • Health, Safety, and Hygiene
    • Ensure compliance with Ministry of Health hygiene and sanitation regulations.
    • Abide by all COVID-19 Standard Operating Procedures.
    • Maintain high standards of cleanliness, organization, and food safety at all times.

Job Requirements

Qualifications & Experience

  • 10 Years Previous experience in a Head stewarding housekeeping role within a restaurant or hotel environment.
  • Experience supervising or leading a team.
  • Good knowledge of hygiene, sanitation, and cleaning procedures.
  • Ability to work efficiently in a fast-paced environment.
  • Ability to work independently and as part of a team.
  • Willingness to work during operational hours, including weekends and public holidays.
  • Strong sense of responsibility, organization, and attention to detail.
