A Junior Sous Chef is required to assist the Head Sushi Chef and Sous Sushi Chef in the planning, preparation, and management of food production within the sushi department restaurant. The position involves sushi preparation, kitchen operations, staff training, and inventory control, while ensuring compliance with health, safety, and hygiene regulations.
Job Description
Duties & Responsibilities
- Assist in planning, organizing, and managing daily food preparation activities.
- Prepare all types of sushi, including maki, nigiri, sashimi, and fusion rolls.
- Prepare Japanese-style appetizers, soups, and salads in accordance with traditional culinary standards.
- Carry out Meze Plus kitchen duties including rice preparation, sushi production, and fish filleting.
- Maintain food quality, portion control, and presentation standards.
- Monitor food stock levels, place orders, and ensure proper storage of ingredients.
- Recommend menu improvements and new recipes where appropriate.
- Ensure compliance with Ministry of Health hygiene, sanitation, and food safety regulations.
- Coordinate with front-of-house staff regarding customer orders, special requests, and food allergies.
- Train, coach, and supervise junior kitchen staff in sushi preparation techniques.
- Maintain cleanliness and organization in all food preparation and storage areas.

Job Requirements
Qualifications & Experience
- Minimum of 5 years’ experience as a Chef.
- Minimum of 5 years’ experience in Sushi and Japanese cuisine.
- Proven knowledge of sushi preparation methods and sushi-rolling techniques.
- Ability to work accurately and efficiently in a fast-paced and high-pressure environment.
- Ability to work independently and as part of a team.
- Willingness to work during operational hours, including weekends and public holidays.
- Strong work ethic, reliability, and attention to detail.
