Job Description

The Barista / Bartender is responsible for preparing and serving high-quality specialty coffees and other beverages across Fregate Island’s dining outlets. The role requires strong barista skills, particularly in espresso preparation, milk texturing and latte art, alongside the ability to support bar operations and general Food & Beverage service. The ideal candidate will be passionate about coffee, confident in interacting with guests and comfortable working in a luxury hospitality environment.

Main Tasks

• Prepare and serve specialty coffees, including espresso, cappuccino, flat white, latte and other coffee-based beverages.
• Demonstrate excellent latte art skills and ensure consistent coffee quality and presentation.
• Operate, clean and maintain professional espresso machines, grinders and other coffee equipment.
• Adjust coffee grinding, extraction and brewing techniques to achieve consistent flavour and quality.
• Maintain good knowledge of coffee beans, origins, roasting profiles and brewing methods.
• Prepare and serve other beverages, including mocktails, cocktails, wines, spirits and soft drinks according to established recipes.
• Assist with general Food & Beverage service across restaurants, bars, private dining and special events.
• Recommend beverages based on guest preferences and provide friendly, personalised service.
• Maintain cleanliness, hygiene and organisation of coffee stations, bars and service areas.
• Assist with stock control, inventory, ordering and proper storage of beverages and supplies.
• Follow opening and closing procedures and maintain equipment in good working condition.

Job Requirement

Requirements

• Minimum 2 years of professional barista experience, preferably in specialty coffee shops, luxury hotels or resorts.
• Strong practical knowledge of espresso extraction, coffee grinding, brewing methods and milk texturing.
• Excellent latte art skills, with the ability to consistently produce high-quality designs.
• Experience operating and maintaining professional espresso machines and coffee grinders.
• Good knowledge of coffee varieties, origins, flavour profiles and preparation techniques.
• Previous bartending or Food & Beverage service experience in a hotel, restaurant or resort.
• Basic knowledge of cocktails, wines, spirits and other beverages.
• Ability to prepare multiple orders efficiently while maintaining quality and presentation standards.
• Strong communication skills and a friendly, guest-focused approach.
• Good command of English and ability to work independently and as part of a team.
• Flexibility to work across different Food & Beverage outlets and adapt to remote island living and working conditions.
