Job Description
General Duties and Responsibilities
- A Chef must have sound knowledge of food & beverage products, be able to check cost control reports and be fully aware of the internal organization of a catering department.
- Responsible for certain areas namely; Store rooms, Provision areas and Food and Beverage outlets.
Job Requirements
- Maintaining high standards of food, service, and health and safety.
- Responsible for meeting a safety and sanitary guidelines provided by Management and local health authorities
- Responsible for ordered supplies in absence of Head Chef and Sous Chef
- General Meze plus duties from portioning controls, filleting and deboning of meats and general weighing of products to maintain food costs.
- To work cooperatively with others and accepts directions from supervisors
- Supervise and oversee all phases of meal production and works with colleagues to ensure proper quality and quantity of food production and meal preparation in a timely manner
- Review meal menu and prepares appropriate food items according to recipes and in adequate volume as indicated on production sheets
- Review all incoming products freshness to ensure food quality
- Complete daily production sheets
- Ensure the highest standards in sanitary kitchen procedures, food preparation and storage maintained
- Check food for taste, consistency and health presentation
- Stock control and co – responsibilities for all kitchen stock.
- Preparing reports at the end of the shift/week, including staff control, food control and sales
- Assist Head Chef and Sous Chef in controlling of costs by reviewing portion control and quantities of preparation; minimizing waste; ensuring high quality of preparation.
- Responsible and assisting Head Chef with stock- taking mid-month and end of month
- Assist Head Chef and Sous Chef with Planning and coordinating functions
- Minimum 10 years experience as a chef
- Diploma in Hotel management or food and catering
